I don’t know why, but when I’ve gone to the grocery store the past few weeks, I act like I don’t really need food. We’re in the final weeks of the semester, who needs to eat, right? Boy, is this false. Check out these recipes for some quick and easy, but also somewhat ~gourmet~, lunches and dinners.
Quinoa/rice/grain bowl
So many options here. This is such an easy and healthy way to eat, and it is particularly awesome for meal prep. Here are two of my favorite quinoa/rice/grain bowl recipes (just throw each ingredient into a bowl):
(1) Mexican-style bowl: quinoa/rice/grain + shrimp + black beans + corn + choice of roasted veggie
(2) Sweet potato & goat cheese bowl: quinoa/rice/grain + chopped almonds, roasted sweet potato, goat cheese, dried cranberries + spinach
Shrimp tacos
Fill warmed tortillas with cooked shrimp, black beans, corn, lettuce, salsa and whatever else your heart desires for a quick and tasty meal.
Spaghetti (squash) and meatballs
A healthier spin on traditional spaghetti and meatballs. Cut spaghetti squash in half and scoop out the seeds. Cover the scooped insides with olive oil, salt and pepper. Microwave for about 15 minutes and let cool for about 10 minutes. When cooled, you should be able to take a fork through the squash and see spaghetti-like pieces. Top with marinara, meatballs and parmesan cheese.
